As I was driving my middle child to ice skating practice my oldest daughter started to have a conversation. She is 9 years old so definitely still a child but growing up so fast that our days consist of watching YouTubers, practicing her hip hop dance moves and other digital games and movies. So she got bored on the car ride and decided to talk on her phone. Here is the problem, she doesn’t have a phone. She was talking to her hand. Soon all the kids were talking to their hand. TIME OUT PLEASE! Not everyone can talk in the car at once. This is part of my single mom life.
I have often thought about getting her a smartphone. When you are a divorced parent a big decision like that requires a lot of coordinated skill and communication with the child’s other parent. We aren’t exactly friends but we are cordial to each other. This is very stressful as a single mom because as much as you try to make everyone happy, you won’t. She already has a portable gaming system connected to WiFi so we talk about digital and online security. A phone is just another extension of that. I thought it would be an easy way for dad, me or any family member to reach her easily. I didn’t want to add her to my phone plan so I opted to try the plans available via Walmart Family Mobile PLUS. Getting her a phone plan with just talk and text wasn’t going to cut it. She is on YouTube a lot as well as playing games online so I know that a data plan would be required on whatever phone plan we decided on. I also liked the fact that both dad and I can have access to the bill if needed. I opted to get my daughter the Samsung Galaxy Core Prime since I am very familiar with Samsung products. It was very light and had a long battery life with the Ultra Power Saving Mode. She can take great photos with its 5 MP rear facing camera. Once we got home, we inserted the SIM card and activated the phone and set it up with our Wifi password so it could use Wifi at home. The process was so simple I couldn’t believe it. When you set up the service via the familymobilehub.com site you can then choose the appropriate package. I also needed to make sure I got my discount for the one free VUDU movie. There is also a Vudu app available for your phone.

After the phone was all set up, we dove into our Swedish Fish treats that we picked up at Walmart the same night we picked up the phone. Swedish Fish in the 1.9 lb bag were on Rollback at Walmart for $4.48 in the red variety and new packaging and they also had some in a variety of colors and flavors in a “New Look! Single Mom Movie Night with Swedish Fish
I decided to pair up some of my favorite snacks for some adult, alcohol free beverages and treats to make my single mom movie night a success. You might be under this misconception that a single mom movie night is me in my sweatpants eating a gallon of ice cream and watching a romantic comedy while I drown in in my single-ness. Far from the truth. Once I got Vudu set up it was a relaxing evening of . . . . sleeping kids. My first movie of choice was Amy, the documentary about Amy Winehouse. I got hooked right away since I love her music so much and this was definitely not a movie of choice for the kids.
While I would have liked to create some kid friendly ideas, I stuck to some favorites that really celebrated me and the things I enjoy. It is rare for a single mom to get any kind of “me” time so a movie night for me was in the works. It definitely doesn’t need to be anything fancy. I typically just lie on the couch or my recliner and cuddle on the couch with my blanket. Swedish Fish was a first for me. I had never eaten Swedish Fish before and I absolutely loved them. I even brought some to work and combined them with another favorite treat of mine – dates. When I want to unwind and watch a movie I typically make myself a cup of spiced Masala Chai tea with milk and eat some dates or fruit. I just added some Swedish fish candies to the dates to change up the snack. Sometimes I will add candy coated chocolates.
Masala Chai Tea
I typically just go to a local Indian grocer here in Dallas where it is already prepared and in tea bags. If you want to make it, I adapted this from Epicurious.com.
- 1/2 teaspoon cardamom seeds or ground cardamom
- 1 (1 1/2-inch) piece cinnamon stick
- 4 white peppercorns (find these in Asian Grocery Stores)
- 1/4 teaspoon fennel seeds
- 2 cups whole milk or Evaporated Milk
- 3 1/2 tablespoons packed light brown sugar, or to taste
- 1/2 teaspoon ground ginger
- 2 cups water
- 5 teaspoons loose orange pekoe tea or other black tea
- Equipment: a mortar and pestle or an electric coffee/spice grinder
Directions: Grind together cardamom, cinnamon stick, peppercorns, and fennel seeds with. Bring milk just to a simmer in a 2-quart heavy saucepan. Stir or whisk in brown sugar, ground spice mixture, ginger, and 1/8 teaspoon salt, or to taste. Reduce heat to low and simmer gently for 3 to 5 minutes. Then bring water to a boil in a 1-quart saucepan, add tea, and boil 1 minute. Pour tea through a sieve into hot milk mixture (discard tea leaves) and cook over low heat 1 minute. Stir before serving.
Agua Fresca garnished with Swedish Fish
Another beverage I made was Agua Fresca. You will see agua fresca in Mexican markets and fruterias and the name literally translates to “fresh waters.” By combining fruits, flowers, seeds, and spices with water and sugar then pouring over ice you create a cool tasty treat. I made mine with Cantaloupe, pineapple, ginger, water and lemon juice. I sweetened mine with Texas honey but sugar is traditionally used. Since I am from Hawaii, there is a local delicacy we enjoy called Li Hing Mui which is a preserved dried plum. In this case I used li hing powder which traditionally flavors mango and fruits. I added some of this in the Agua Fresca and garnished with the Swedish Fish on some toothpicks. The Swedish Fish reminded me of Japanese Koinoburi Carp windsocks that are flown from houses every May 5th, Boys Day. I created the garnish of Swedish Fish to represent that.
2 cups diced, peeled ripe cantaloupe
2 cups diced, peeled pineapple
2 tsp grated ginger
1 tsp li hing powder (optional)
3 cups water
2 to 3 teaspoons fresh lime juice
1 tablespoon sugar (I used Raw Texas Honey)
Swedish Fish and toothpicks for garnish
Mix all ingredients and just 1/5 cups of water in a blender until real smooth. Strain out the pulp and mix in the remaining water. Refrigerate and then pour into a glass over ice. Stick a toothpick through two Swedish Fish by the mouth and stick onto your glass. Serve.
Mason Jar Aquarium Ice Cream Floats
This is such a fun and sweet dessert take on my favorite drinks with Swedish Fish. I just filled some mason jars with vanilla ice cream and Swedish Fish. Then I poured some blue juice and lemon lime soda over the ice cream. Topped it off with a dollop of whipped Cream and I was done. You can use blue vanilla soda if you like.
These tasty treats were phenomenal and I really liked the fact that VUDU has high definition movies including 3D. I am going to try out more recipes with Swedish Fish for more movie nights.
