We didn’t know what was happening. All we knew was that while we were on a roadtrip, my nephew had to stop for what seemed like every minute to use the bathroom. He couldn’t hold and it was very concerning. After my cousin took him to the doctor his blood sugar had skyrocketed. He was just 13 years old and his whole life changed quickly. He had diabetes and he had to learn how to eat again. At least that’s what we called it. A star athlete he had to learn how to change his eating habits to manage diabetes and to have the energy to play football. He also had to learn to check his blood sugar levels.
Diabetes is not a new topic in our family. My sister had Type 2 Diabetes that she was able to beat it through losing weight, eating better and being able to manage diabetes. Many of my family members have had diabetes and sadly some died because of it. Latinos have a higher prevalence of diabetes with 16.9% having the disease. According to the American Diabetes Association, if you look at the different subgroups the percentages impacted by the disease are as follows: 18.3 % of Mexicans, 18.1% of Dominican and Puerto Rican descent, 17.7% Central American, and 13.4% of Cuban descent. Compare that to just 10% of non Latino whites and it shows that Diabetes management and education is a necessity in the Latino community.
It has been a difficult disease for my own extended family to manage and my significant other, Ironman also had diabetes in his family as well. His family is also of Mexican heritage and so it is significant that we all work together with our families to manage healthier lifestyles.

If you are trying to manage diabetes you start with the basics of food management. Glucerna has tested their own recipes, portions and quantities to deliver appropriate nutritional value to manage hunger and blood sugar levels. From Glucerna’s list of lunch meals I created a Turkey Avocado Ranch Wrap from one of their many lunch recipes. As a working mom, I need to pack my lunch in the morning and also have Glucerna bars and Shakes as a snack throughout the day. It provides the necessary fuel I need to work a complete day and to reduce unnecessary snacking of the office candy bowl or vending machine.
Turkey Avocado Ranch Wrap
1 (8-inch) whole-wheat flour tortilla
2 oz sliced turkey breast
1 oz reduced-fat cheese
1 Tbsp. reduced-fat ranch salad dressing
1/2 cup shredded lettuce
1/2 cup diced tomato
4 Tbsp. avocado
Spread ranch dressing on tortilla.
Top with turkey, cheese, lettuce, tomato, and avocado. Roll up tortilla.
Check out the video in preparing this wrap. What you’ll see in this video is my use of a food scale. As you use the scale more you will be able to eyeball portion sizes. I use a scale in the morning when I am preparing lunch for later.
